I am thrilled to take you behind the scenes at Chef Mike's ABG for an exclusive taste-test of one of their best fall dishes.

This 14-ounce marbled pork chop is seasoned with Chef Mike's special blend, grilled and then finished in the oven before it's plated with caramelized Brussels sprouts, apple and bacon. They top it with an apple cider glaze and sweet potato hay.

Watch how these masters work in the kitchen: The pork chop is fired quickly on the grill, which pushes out all those tasty juices, and then allowed to rest before it's plated. As Chef Mike says, resting is like a big, juicy hug that pulls all the juice and flavor back into the meat. The rest is a tender, juicy pork chop bursting with flavor.

It's seriously the best pork chop I've had in my life.
