Opening a restaurant has always been a gamble. Keeping one open right now might be even harder.

Think about everything that has to go right every single day. The food has to be good. The service has to be solid. The dining room needs to be busy. Then there are food costs, payroll, insurance, rent, utilities, and about a thousand other expenses most of us never think about when we're deciding where to grab dinner.

And lately, those expenses seem to be coming from every direction.

New Jersey Restaurants Are Feeling the Pressure

Restaurant owners are also dealing with customers who are watching their own budgets. Dinner for a family of four isn't exactly cheap anymore, so people may be eating out less frequently or looking for deals when they do.

That's a tough combination for restaurants. Their costs go up, but they can only raise menu prices so much before customers push back.

Then there's staffing. Finding and keeping good servers, bartenders, cooks, and managers has become another major challenge. Restaurants aren't just competing with the place down the street for customers. They're competing for employees, too.

It's why I hate seeing another local restaurant disappear. Behind every closing are employees, regular customers, and owners who poured a lot into making the place work.

Unfortunately, we can apparently add another familiar Monmouth County restaurant to the list.

Rosalita's Roadside Cantina on Route 9 in the Marlboro area has unexpectedly closed.

The restaurant was a longtime spot for tacos, burritos, fajitas, and, of course, margaritas. Its Brick location previously closed in May 2025 after seven years.

What's particularly surprising is how suddenly things appear to have changed. This was posted on Instagram.

It's another reminder that when there's a local restaurant you love, don't wait too long to go back. These places need us now more than ever.
