It's National Grilling Month.

And just because I'm a vegetarian doesn't mean I can't enjoy grilled food, but there aren't many barbecues that go completely veggie, obviously.

I love just about any vegetable on the grill, and I adore Boca Burgers. They're so good even confirmed meat eaters like them!

When I was a kid, I ate the usual hamburger from the grill, but my favorite grilled food was the potato.

My Uncle Aris in Queens, New York would wrap potatoes in aluminum foil and cook them until they would literally melt in your mouth.  Saturated with butter or margarine, they blew the burgers and hotdogs away (in my mind).

I've never missed the grilled meats, but I have yet to have a potato cooked on the grill since those happy childhood memories, and I've never forgotten how good they were!

Got any favorite recipes for grilled veggies you'd like to share?
