There are few things I love the taste of more than fresh mozz, and watching these Italians make their artisan cheese is making my mouth water.

This vid was shot in Caseficio Torricelle in Paestum, Italy, the mozzarella capital of the world. Michele takes us through the delicate and detailed process of making artisinal mozzarella, starting at 2 in the morning. This project was commissioned by Whiteout’s Alessandro Salerno.
